Those would be my Top 3, coincidentally the only figures I don't own and/or never saw in stores.

Ben Kenobi (Legacy)
Plagueis (Black Series)
Any of the Republic Commando figures

I'd just want that last black series Stormtrooper to be released pretty much forever.

Farmboy Luke is another figure worthy of a significant resculpt.  The VOTC figure was novel, but not a great representation.  The TLC Resurgence of the Jedi version was good, but the proportions seemed a little bit off.  If Hasbro used that figure as a starting point for a new farmboy Luke?  Then I think we'd be in a good place.
