5 out of 6 where hands are cut off. The only exception was The Phantom Menace.

The Phantom Menace - Nobody or one
Attack of the Clones - Zam Wesell (The bounty hunter hired by, and killed by Jango Fett), and Anakin Skywalker.
Revenge of the Sith - Count Dooku, Mace Windu and Anakin Skywalker/Darth Vader.
A New Hope - Ponda Baba (The aqualish who harassed Luke)
The Empire Strikes Back - Luke Skywalker

I've just come back from a mall.  In the mall, I had gone to EB Games and I played some of Lego Star Wars 2: The Original Trilogy.  It's really awesome so far but I haven't played the whole game.  Just some of the game.

The levels that I played were Secret Plans (A New Hope), Through The Jundland Wastes (A New Hope), and the beginning of Jabba's Palace (Return of the Jedi) [Note: I did not get up to the point where you battle Jabba the Hutt's pet rancor].

In 5 out of 6 movies, R2-D2 is in the Astromech slot of a starfighter, the only exception: Attack of the Clones!

Another fact about R2-D2

5 out of 6 where R2-D2 flew in a starfighter with a member from the Skywalker family.  The only exception was Attack of the Clones because Padme wasn't married to Anakin yet.

It looks and appears as though one top favorite action figure in the Revenge of the Sith toy line for everyone, including myself, is the Red Leader Jedi Pilot Obi-Wan Kenobi.

In 5 out of 6 movies, C-3PO has some sort of part taken off or put back on him. The exception is ROTS.

What part would it have been for AOTC?

Remember in the droid factory on Geonosis in Attack of the Clones?  C-3PO lost his head and a battle droid head was put on his body and Threepio's head was put on the body of a battle droid.
