1. The Empire Strikes Back
2. Terminator 2
3. Toy Story 2
4. Shrek 2
5. Spider-man 2

Empire's a no-brainer, of course.

Another one that comes to mind that I liked a lot was Aliens.

Alien 2 (Aliens).
Superman 2.
Road Warrior.
X-Men 2.
Evil Dead 2 followed by Army of Darkness.

X2-- good God, this flick was a blast

Army of Darkness
Spider-Man 2
Star Treks IV, VI, and First Contact. Hard to beat these films.
LOTR: The Return of the King-- love the Rohirrim's charge on the orc army at Minas Tirith. Probably my favorite scene in my admittedly limited scope of film.

Agreed on Wrath of Khan, I can watch that many times over

I also think its funny that Temple of Doom is making best and worst sequel lists...I fall in the middle, I don't think it horrible but its not the absolute Cat's Meow.  Last Crusade is one of my favorite movies so it gets the sequel nod
