The can update almost any POTF2 scuplt, but at the top of my list are:

Death Star Trooper
Imperial Scanning Crew member
Luke X-wing (the POTJ was pretty whimpy)
Wedge

The last wave of each collection was universally hard to find, and if you're going to go with the accesory sets as well, since they have the same card size, the second wave is harder to find than any of the figures.

The chin guns and the side guns are completely different molds and in my opinion larger and bulkier, but other than that, the body is identical.
